Garlic-Creamy Vegetables
From Brocollis to carrots, you can use as many different vegetables for this easy side dish.
1 cup water
1 cup each cut-ups of: asparagus, brocolli, bell peppers, carrots and cauliflower
1 teaspoon olive oil or your preferred oil
4 garlic cloves, finely chopped(or a tablespoon of puree garlic)
1/3 cup reduced fat mayonnaise
1/3 cup nonfat milk
2 tablespoons chopped fresh parsley

Place water in large saucepan;bring to boil. Add vegetables. Reduce heat to low; cook, uncovered until vegetables are tender-crisp.
Heat oil in small saucepan over medium heat. Add garlic; cook and stir until golden brown. Remove saucepan from heat; stir in milk and mayonnaise.
Drain vegetables; place in serving bowl. Pour in garlic sauce; toss to evenly coat vegetables and sprinkle with parsley.
