There is something about fish that gets the novice chef all worked up and racing for the take-out menu! But there is really no mystery to it Here is a recipe that anyone can make and takes little time at all. Plus, it's delicious!
Most of the time is in the preparation, so get everything ready before you turn on the stove.
INGREDIENTS
4 fish fillets (I usually use catfish), cut into quarters
2 cloves fresh garlic, chopped
1/2 cup diced onion
1/2 cup diced red pepper
2 tablespoons hoisin sauce (available at oriental food stores)
1/3 cup water
1 tablespoon parsley
COOK!
1. Preheat broiler.
2. In a large, heatproof saute pan (not non-stick), cook garlic, onions and peppers over medium-high heat until soft.
3. Add hoisin sauce and stir, letting the sauce stick to the pan a little bit, but not to burn.
4. Add water and stir thoroughly, scraping any stuck-on sauce off the bottom of the pan.
5. Turn the heat to low and simmer two minutes.
6. Add fish pieces and brush the tops of the fish with the sauce.
7. Broil 8 minutes.
Serve with vegetable or in a tortilla wrap as fish tacos.
