Drink recipes: Daiquiri

A Daiquiri is like any other drink or cocktail in that the better ingredients you use, the better the daiquiri will turn out. When mixing drinks to savor and enjoy, cheap is not the way to go. Now if you are just looking to get drunk, I guess it doesn't make a lot of difference. Daiquiris are so good and with all the different fruits you can use, especially for frozen daiquiris, it is like going through an orchard. As many of you know by now, I love rhubarb and anything made with rhubarb. My daughter used to be a bartender and together we came up with a frozen rhubarb daiquiri. Since I have a big rhubarb patch we enjoy these almost every weekend while rhubarb is in season. We also have them once in a while made from frozen rhubarb but I think they are better when the rhubarb is fresh. As with anything, fresh is always best.

FROZEN RHUBARB DAIQUIRIS

6 cups of fresh rhubarb, chopped
1/2 cup water
1 1/2 cups sugar
1 2 liter bottle of lemon-lime soda
1 12 oz can of limeade concentrate
1 1/2 cups light rum

Combine the rhubarb and the water and bring to a boil over medium heat. Stir in the sugar and continue heat until sugar is dissolved. Remove from heat and strain. Let liquid come to room temperature. Combine the remaining ingredients, add the rhubarb juice and freeze. Stir occasionally while mixture us freezing. Spoon into chilled glasses and top with a sprig of mint if desired.

There are many good rums that you can use and the better the rum, the better the daiquiri. I usually use Bacardi Light but once in a while if the store has some better light rum on sale I will buy it for a nice change. Not being a big drinker, I haven't developed enough expertise to tell a lot of difference. The basic rhubarb is really good but you can add most any other fruit along with the rhubarb to come up with other combinations that you like. I really like boysenberries or blackberries. Peach and banana make an interesting addition too. Try different things and come up with new things that you like. That is a lot of the fun of making cocktails is trying new and different things,

I usually make a double or triple batch because there are seven of us that like them and so one batch doesn't go very far. Well actually there are ten but we don't let the grandkids have much. These are really refreshing on a warm Sunday afternoon and evening setting out on the deck watching the sun set over the Rockies
