Amazing Strawberry Soup
My friends and I have theme dinners periodically, where we pick an ingredient, a type of cuisine or other random "anchor" and create meals around the selection. So we all had breakfast for dinner one night, another gathering featured Caribbean recipes. But my all time favorite was the dinner where every dish had to contain strawberries. As this is the season to get luscious strawberries at peak ripeness, here is a unusual and mind-numbingly good recipe for strawberry soup. It couldn't be easier, and works for brunch, dinner, and even dessert!
INGREDIENTS
2 pints of strawberries
2 cups of plain yogurt
1/2 cup of orange juice
1/2 cup of white sugar
1/2 cup or water (or a little less for thicker soup)
1/8 teaspoon ground cardamom (the secret to its unique flavor)
INSTRUCTIONS
Throw everything into a blender and puree.
Chill.
Serve.
