"Easy Cheesy Broccoli"

This dish is modified from one my mother makes for every special occasion in our extended family. Mom made it in a casserole dish. I wanted a quicker recipe for my busy ovo-lacto vegetarian husband and myself, so I came up with the following, which can be whipped up in a sauce pan.

Serves: 4 - 6
Prep Time: 5 minutes

You will need:

1 bag frozen broccoli cuts
1/2 block Velveeta cheese
1 package (30) Ritz crackers, crushed

To prepare:

1. Grab a large sauce pan
2. Dump entire bag of frozen broccoli into the pan
3. Add 1/2 cup of water
4. Cover sauce pan and steam broccoli until tender
5. While broccoli is steaming, cube Velveeta into bite sized chunks
5. Drain broccoli, leaving about a tablespoon of water in bottom of pan
6. Add Velveeta to broccoli and stir until cheese is melted
7. Stir in crushed crackers
8. Be sure dish is thoroughly heated
9. Serve immediately
