Recipes: Quiche

QUICHE! A  very interesting word for a very interesting and tasty dish.  I can't think of much of anything that I like better for breakfast than a good flaky crust around a good quiche with fresh eggs and any number of different vegetables in it. Here's a great recipe for an asparagus cheese quiche that my Mom used to make. Be careful and use only the top tender part of the asparagus and save the rest of it to cook and grind up for cream of asparagus soup. I think that is the reason so many people do not like asparagus is that they get the tough part of the stock in their quiche or other ways it is served. My new asparagus patch should really start to produce this year. There are new studies out that seem to show that consumption of asparagus will help keep bladder cancer from coming back and prevent the occurrence of other cancers. What better way to enjoy asparagus than in a good quiche.

ASPARAGUS SEAFOOD AND CHEESE QUICHE

I unbaked pie shell 2 cups fresh asparagus spears 1/2 pound small cleaned deveined shrimp 1 cup scalded half and half 4 eggs Salt and pepper to taste 1 cup grated Swiss Cheese

Lightly butter the bottom of unbaked pie shell. Homemade grandma's hot water pie crust is best but a nice deep dish Marie Callendar's or Mrs Smith's will work just as well. Add asparagus and shrimp. Use the small salad shrimp unless you want to chop up the large ones. Blend the eggs, half and half, salt, and pepper with a fork. Pour over mix in pie shell. Bake at 450 F for 12 min. Reduce heat to 300 F and bake for 45 minutes. Test with a clean fork and when it comes out clean it is done. Easy and very tasty.

You can use crab, clams, oysters, salmon, tuna or scallops instead of shrimp if you like. Try different kinds of cheese. I like to make this with broccoli or a good chopped up fresh sweet onion. Add some green chilies or jalapenos. Make it your own and enjoy. It is always best with fresh ingredients but don't hesitate to use frozen ingredients if fresh are not available.  It is a very tasty way to get your vegetables.
