All about cauliflower

Cauliflower is definitely one of the best vegetables around. They are perfect at lunch or at dinner. Many people do not eat cauliflower because they believe it has no taste, but even though they may look bland, they do not taste bland. The smell, however, is a different story. They provide many different health benefits, and are easy to cook as well.

Cauliflower has been known to be a great side vegetable with many dishes. I personally love cauliflower with oven-baked eggplant, or even chicken cutlets. For those of you who love red meats, you could even eat cauliflower as a healthy option with steak or pork chops. Since cauliflower is white, I try to pair it with foods that have some color, but this is not necessary in order to get the health benefits. If you really do feel cauliflower is too bland, mix it with some other tastier food on your plate. You are getting the nutrition, with the plainness of it.

Cauliflower has many vitamins and minerals, including polyphenols and flavanols. These are two things that protect you against free radicals which cause many types of cancers. Cauliflower stop cancer cells from forming. Being a vegetable, it also is a great source of fiber. It has also been known to prevent macular degeneration.

Cauliflower is really not that hard to cook. I know that it comes wrapped in paper, and has a green plant-like protection around it. This, however, is something you have the option of cutting off and discarding in the garbage. Be sure as well to wash your cauliflower before leaving it in the pot, because it is prone to carrying alot of dirt. All you must do first is cut the cauliflower into smaller pieces, and simply place the cauliflower in a pot filled with boiling water. It generally takes 20-30 minutes to cook, or longer if you want it extra-tender.

I think of cauliflower as my substitute potato. Potatoes do have health benefits, but they are also a form of white carbohydrates. They do not have fiber, so they cause insulin levels to spike. Potatoes also could lead to weight gain. I am not saying you must give up potatoes; but instead of eating potatoes all the time, have some cauliflower instead. They are easier to cook as well.

My ode to cauliflower is a personal but sensible one. People think that in order to eat healthy, you must eat tasteless food. This is not true. The problem is, we are so used to fast food with saturated and trans fats mixed in, so we do not notice when food has not been processed this way. Healthy fats, like olive oil or sunflower oil, are commonly great sources of polyunsaturated and mono-unsaturated fats. Cauliflower could be stir-fried or steamed, so this is a great way to make it taste more like the oils. Diet and healthy do not have to mean boring and bland.

Get a big, round ball of cauliflower today, and eat your way to better health!
