Working Woman's Egg Drop Soup
Ingredients:
2 cups broth or stock
1 tablespoon vinegar
1 raw scrambled egg (or egg substitute equivalent)
1 tablespoon soy sauce
2 tablespoons chopped fresh or dried chives
1/4 cup chopped meat and/or diced cooked vegetables
Directions:
Pour broth/stock and vinegar into a medium size saucepan and bring to a gentle boil. Turn off heat source. While stirring broth clockwise with whisk or fork, hold the container with egg about 6 inches above the saucepan. Slowly and steadily add the egg to the broth. When finished, continue stirring clockwise for one minute. Gently fold in the soy sauce, chives, and chopped chicken and/or vegetables. Add salt and black pepper to taste. Serve.
Note: You can stir counterclockwise if you wish-just maintain stirring the same direction throughout the recipe.
Serves 4.
