Recipes: Spinach salad with bacon

This is my favorite recipe for spinach salad with bacon.  I'm not a huge bacon fan, but sometimes I want something different.  The same old salad does get boring, so I make this salad a few times a year.  It’s a tasty salad that doesn’t cost much to make and is easy to prepare.  This is my version of the recipe.  If you don't like Italian salad dressing, feel free to use your own.  You don't have to use finely chopped egg or bite size pieces of lettuce, but I think this salad tastes better with smaller pieces.  I use a third of an egg for one serving but you can always use more egg if you’d prefer.  I normally don't use croutons when I make this salad but croutons are optional.  Feel free to add croutons or tomatoes or whatever you like to your own salad.  Depending on how many servings you want you will have to adjust the portions of the recipe.  If you're a bacon lover feel free to add as much bacon as you'd like.

3 bacon slices, diced
2 c. bite-size pieces raw spinach, about 4 oz.
1 c. bite-size pieces of lettuce
1(or 2) hard-cooked egg, finely chopped
1/2 c. prepared Italian salad dressing

Fry the bacon until it's crisp; drain. You can also heat some precooked bacon in the microwave if you prefer.  servings. Once your bacon is ready cut it into little pieces.  Boil your egg or eggs depending on how many you want.  Once you have cooked egg(s) chop your egg(s) into pieces.  Add spinach and lettuce in a salad bowl; sprinkle with bacon and chopped egg.  If you're making your own salad dressing you can make it at any time.  Add the salad dressing; toss lightly.  Feel free to add salt and pepper to your salad as well.  I normally add a little bit of salt and pepper to taste.  Serve and enjoy!  This recipe makes 3 cups, 3 servings.
