Here is a great recipe for Spanish Rice that we like a lot but yet it is a little different that the everyday Spanish Rice. We call it Rice Ole'. With four chopped up fresh jalapenos in it, it gives it a definite Mexican flare. I have taken this to many covered dish dinners and it has always ended up with a cleaned out bowl to bring home. We usually make it with ground beef but for a little different flavor use a pound of a good garlic sausage.
BILL'S RICE OLE'
1/2 cup of uncooked brown or white rice
1 cup chopped onions
4 fresh jalapenos, seeded, deveined, and finely chopped
1 tbsp butter or meat drippings
2 1/4 cups water
1 beef bullion cube
1/2 cup tomato paste
1 1/2 tsp salt
1 tsp chili powder
1/2-3/4 lb cubed cheddar cheese
Brown the meat,onions and jalapenos in fat, stirring to break the meat apart. Stir in the rice, water, bullion cube and tomato paste. Add the seasonings. Heat to boiling; stir well and cover. Lower heat and simmer for 25 minutes. Add cheese cubes and toss lightly. Serve at once.
This never fails to disappear right quick around our house.
