A fresh, vibrantly flavored tomato salsa is frequently appreciated. The stuff you buy in a jar at the store can't compare to a homemade version, though. Here is a wonderful recipe for fresh salsa (based on the salsa at my favorite Mexican restaurant).
Ingredients:
1 28-oz. can of crushed tomatoes (or, the equivalent in fresh tomatoes, if they are ripe and flavorful)
5 - 6 cloves of garlic, minced
1/2 cup of white onion, chopped
1 jalapeno, diced finely
handful of cilantro (about 1/2 cup), lightly chopped or torn
Directions:
Mix all ingredients together in a glass bowl and put it in the fridge, covered. It is usually best the third day, but can be consumed immediately. Serve on tacos, with corn chips, or get creative!
