This simple salad recipe fits alongside any main course. It is so yummy that you may only want to eat it and not your main course!

1 bunch of Arugula and 1 bunch of Spinach
1 package of goat cheese
Large handful of dried cranberries
Honey
Dijon Mustard
Balsamic Vinegar
Sourdough bread

Wash the Arugula and Spinach thoroughly and dry thoroughly.
Toast several pieces of sourdough bread and coat with goat cheese. Cut the slices into small squares - these are your croutons.


For your dressing mix honey, mustard and vinegar to taste.
Dump the Arugula and Spinach into a salad bowl, coat the leaves with the dressing, sprinkle remaining goat cheese over top, cranberries and shaved parmesan if you have it.
Add the croutons and serve.

Meat is optional. Shrimp, crab, nice roast beef all would be lovely additions but this salad is just so tasty on its own you won't need anything extra!


A Hint of Thai Salad:

1 head Romaine, 1 bunch of Bok Choi
1 package of fresh stir fry bean sprouts (NOT CANNED)
1 package crunchy chow mein noodles
Water chestnuts
Green onions
Basil leaves
Wedge of lime
Chopped up cashews
Snow peas
Cooked shrimp or chicken
Peanut satay dressing


Wash Romaine and Bok Choi thoroughly and dry thoroughly
Drain the chestnuts, slice the thicker ones in half
Dump Romaine and Choi into salad bowl- squeeze a few drops of lime juice and mix it around the leaves
Toss in the chestnuts, bean sprouts, and chopped up onion and basil leaves
Squeeze a bit more lime and mix around.
Add snow peas and cashews, shrimp or chicken, and coat with peanut satay dressing.
Sprinkle crunchy noodles over top, sprinkle few more basil pieces and more lime juice and serve.
