There are popular mega-freelance job websites and then there are unique freelancing opportunities. Look carefully and you can find a great freelance job that stimulates your mind and interests.
I would suggest first searching out freelance writing jobs on some of the popular freelance websites. These websites have a wide range of opportunity because they specialize in offering freelance jobs. Some to seek out are:

I suggest using other avenues for more varied and unique freelance opportunities. Here are a few ideas to try:
-Craigslist.com: As one of the most popular job boards on the Internet, Craigslist collects some of the most unique and unheard of opportunities. Search for "freelance writing", "freelance translation", "translate job", or "writing job" for fun jobs that may be more fun and exciting. (http://www.Craigslist.com/)
-About.Com: I like the idea of becoming an expert in one area. This type of job should be reserved for just that: experts. Don't get stuck writing a lot of content on a subject that is not familiar to you. If one of their topics interests you, jump on it! (http://www.About.com/)
-Proz.com: Translating jobs that are both professional and yet in a close community. (http://www.Proz.com/)
-451press.com: This website is growing fast. Freelance a blog on a topic that interests you and be syndicated on the website's homepage. They give a generous 40% of advertising. (http://www.451press.com/ Also check out http://www.Hubpages.com/ for the same idea.)
-BloggerJobs.biz: This website frequently posts opportunities that are looking for just the right person. Love your iPhone? Gossip? Your family? Take a look at these outstanding jobs! (http://bloggerjobs.biz/category/blogger-jobs/)
-Thef reelancehub.com: This website combines freelance job postings from several websites. There are many options right on the front page here.(http://www.Thefreelancehub.com/)
CHRISTIAN PUBLICATIONS
These are the best Christian publications I have found that accept freelance submissions:
PARISH LIFE: http://www.ncrpub.com/ 50,000 subscribers, pays $125 per submission. They seek articles 500-1250 words, such as features, inspirational stories, and personal experiences. You'll hear back from them in 2 weeks!
MARRIAGE PARTNERSHIP: http://www.marriagepartnership.com/ 53,000 subscribers, circulated by Christianity Today. They pay up to .25/word for articles with 500-2000 words (they accept reprints!). They seek articles to strengthen Christian marriage, new marriage, and recovering marriages.
MINISTRIES TODAY: http://www.ministriestoday.com/ Bimonthly with 30,000 subscribers. They pay $500-800 for articles 1800-2500 words. Also, $25 per book, music, or video review. Columns and articles about Christian ministry and life.
THEOLOGY TODAY: http://theologyyoday.ptsem.edu/ 14,000 subscribers, pay $250 for 13-17 page manuscripts. Also, $50 per poem. Topics: religion and theology.
THIS ROCK: http://www.catholic.com/ 15,870 subscribers, pays $80-500 for articles 1500-3000 words. Mostly seeks "Damascus Road" stories and other Christian features.
SPIRITLED WOMAN: http://www.spiritledwoman.com/ 100,000 subscribers, pays up $300 for 1200-2000 word stories including inspirational, humorous, practical, and impactful.
ANGELICA: http://www.angelicamagazine.com/ Unknown readership, pays .20/word for features and Christian fiction.
Many Christians are seeking meaningful, Christian freelance writing jobs. The above are some of the more promising publications I have found. As with any job, remember to set up payment calendar in a clear and timely fashion.
