Aunt Marinda's feather light sponge cake

My aunt Marinda is the wife of a minister. She always have to supply members of the congregation with something to eat during all the functions they love to attend. My mother got the recipe from her and I took it over from my mother. I like to use this recipe for making cupcakes.

It is a very easy cake to make with no strange ingredients. The ingredients are the kind of things that you have in your house already. It is always better to mix cake batter with a mixer. But I had to make this recipe without a mixer on more than one occasion and the cake, or cupcakes always came out beautifully.

You need,
2 eggs
a pinch of salt
2 teaspoons of baking powder
1 cup of sugar
1 cup of milk
2 cups of flour
4 tablespoons of oil (sunflower or canola)
1 teaspoon of vanilla essence

Break the eggs in a bowl and mix well with a mixer.
Mix sugar gradually into the eggs until the mixture is light and fluffy.
Sieve the flour and salt together and fold into the egg mixture.
Sprinkle the baking powder over the egg and flour mixture.
Heat the oil and milk together, don't let the milk boil, and add with the other ingredients.
Add the vanilla essence and mix very well.
Put the mixture into prepared tins and bake in a heated oven for 25 minutes at 180 degrees Celsius.
Test with a skewer to see if the cake is done.

Put the cake or cupcakes aside to cool of before you start decorating it with frosting.

For a chocolate cake you can add three tablespoons of cocoa in the mixture.

You can use this recipe for cupcakes, it is a big favorite of my children.

Decorate the cake with the frosting you like or serve it plain.
