Recipes: Vegetarian style burritos

For an on the go type of gal or guy, you need something quick, easy, and delicious to get you through lunch. Whether you have a lunch break at home, at school, or in the office a veggie burrito is something you can quickly make or heat up elsewhere!

Do you ever see chefs on television measure out a tablespoon of this or a half a teaspoon of that? Usually not, so this recipe won't be including any of that bogus measuring! Who needs that waste of time?

Okay, so to make a veggie burrito you will need:

1 large whole wheat tortilla
Sliced portabella mushrooms
Sliced green and red peppers
Chopped purple onion
Baby spinach (with stems removed)
Turmeric
Chili powder
Red pepper hummus (Eggplant hummus is also delicious)
*and if you wish, a cheese of your choice. I'm partial to provolone

First, in a large skillet heat oil (I use canola) over medium heat. Afterwards add the mushrooms, peppers, and onion in together, stirring occasionally. Add a couple dashes of turmeric and chili powder. Don't worry if the veggies surface turn an odd yellow color, that's just the spices doing their work. After five to ten minutes these should be nice and tender. Last add the baby spinach to the skillet, continually stirring. Be ready with the tortilla, because the spinach takes about a minute to wilt.

While heating the veggies, spread the hummus of your choice into the tortilla, this mixes well with the spices and gives all the veggies a nice flavor. Put the vegetables into the center of the tortilla and if you choose, place the cheese over top. Fold the edges of the tortilla in before rolling it up, to avoid messes.

In a separate warm skillet, no need for oil in this one, place the burrito seam side down inside. The burrito should turn crisp within two minutes, then flip and repeat on the opposite side.

Afterwards, voila! Your lunch is ready in 10 minutes. This burrito is fantastic served with blue corn chips or corn on the side. You can also transport it with you very easily. Sick of taking Tupperware or a brown bag to work or school with you? Take out some tinfoil and wrap that baby up hibachi grill style! It'll easily fit into a backpack, purse, or briefcase with absolutely no messy clean up.
