That's right folks, the dreary cold winter is behind us, it's time to think about getting our grills out and cleaning them up, as well as planning the wonderful family get- toghters we will have over the summer. Dust off that grill and get ready for some family fun, I can imagine right now the smell of my charcoal grill all fired up, it's such an enticing aroma. I look forward to having family and friends over to my house for a good old backyard cookout,whether it be a holiday or just getting to spend some time with each other and, enjoying some great food.
Every year I search for new recipes, but I always rely on my all times favorites, which my family and friends always request when they are invited to one of my BBQ's, now that the grills is dusted off and cleaned, fire it up and get ready to cook up something tasty. Here are a few of my favorite picks.
Let us start with a few marinades.
Basic BBQ marinade & sauce
Great for chicken, steak, London broil and chuck steak or chuck roast.
1 Tbsp minced garlic
1 cup finely chopped onion
1 cup ketchup
2/3 cup packed brown sugar
3 large Tbsp Worcestershire sauce
2/3 cup red wine vinegar
red pepper flakes ( to taste )
Salt & pepper ( to taste )
Combine ingredients for marinade, mix well . Place the meat of choice in a container or bowl, cover the meat with marinade, turning to coat well. Refrigerate 6 hrs or overnight, turning occasionally. Remove meat from marinade, discard left over marinade. Place meat on grill over medium coals, till meat is done, turning as needed. I usually make a double batch, so I can baste the meat, you can also make more marinade if you want to use it as a sauce, just heat it in a saucepan and pour over the meat.
A1 Cajun Marinade
Sprinkle 5 teaspoons Cajun seasoning spice over both sises of 1 to 1 1/2 pounds steak, pressing into meat. Pounding out the meat will absorb more flavor and the meat will be more tender when it is cooked.
Place the steak is a container or plastic bag; add 1 cup of A1 original steak sauce, turning to coat both sides. Cover and refrigerate 30 minutes or more, remove from marinade, discard marinade. Grill steak to desired doneness.
Marinated Chicken or Pork
I prefer Hellman's Italian Dressing.
Poke meat with fork or pound out with a mallet. Add marinade to coat the meat. Marinade at least 2 hours. Remove meat from marinade, discard leftover marinade, place meat on the grill, turning until done.
