Oven Dried Beef Jerky
2 pounds lean beef
1/2 cup soy sauce
1 tablespoon Worcestershire sauce
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon liquid smoke
toothpicks
Trim all fat from meat. Cut meat into 1/4 inch thick strips, about 1 1/2 inches wide. In a flat bottomed container combine all seasonings. Stir until dissolved. Add meat strips, coating both sides. Let marinade at least one hour.
Poke a toothpick through one end of meat and hang on oven rack. You can also just arrange strips on oven rack. Dry meat about 8 hours at 150-200 degrees until brown, feels hard and is dry to the touch. Pat off any oil. Store in airtight containers.
