Chicken and mixed vegetable Quesadillas
You will be needing:
Cooking spray
2 cooked chicken breast halves
8 tortillas
1/2 cup chopped onion
1/2peppers(roasted)
1/2 or less hot peppers (roasted)
1/4 cup shredded cheese
Coat in a large skillet or griddle with cooking spray. Set the pan over medium heat to preheat. Arrange tortillas on a flat surface.
Top 1 side of each tortillas with an equal amount of chicken and vegetables.Top vegetables with cheese.
Fold over tortillas. Making a half-moon. Place quesidillas in prepared pan and cook 3 minutes per side.
