Potato soups are great tasting and easy to make. I would like to share with you a recipe my mom found that takes just a short time to make. The recipe tells you to make it on the stove, but I have also made it in the crock pot. However, if you do use the crock pot, you should cook the onions first. The onions tend to not get very soft in the crock pot. Here is the recipe:

Creamy Potato Soup
Prep/Total Time: 25 min.

1 package (30 ounces) frozen hash brown potatoes
6 cups water
1/3 cup chopped onions
2 cans condensed cream of celery soup, undiluted
4 ounces processed cheese, cubed (I use one small box of Velveeta)
1 cup (8 ounces) sour cream
1/2 teaspoon salt
1/4 teaspoon pepper

In a large saucepan, combine the potatoes, water and onion. Bring to a boil. Reduce heat; stir in soup and cheese. Cook and stir until cheese is melted.

Stir in the sour cream, salt and pepper. Cook and stir until heated through (do not boil).

Yield: 13 servings (about 3 quarts)
