STUFFED CABBAGE PARCELS
This is a recipe which I use frequently when I'm going through one of my vegetarian phases. The original recipe was for stuffed marrow (of the carnivore variety - stuffed with meat), but as I was vegetarian at the time and I also hate marrow, I adapted the recipe quiet radically to make it palatable for me. These can be eaten as a main meal or with accompanying steamed, stir-fried or roasted vegetables of your choice. I also find that these cabbage parcels are a good vegetable accompaniment to a meat meal, and they go down well at dinner parties.
To make 4 parcels (serves as 2 per person), you will need..........
INGREDIENTS
4 large, whole green cabbage leaves, washed
4oz (cooked weight) of boiled whole grain rice
1 tablespoon canned sweetcorn, drained
1 tablespoon dried raisins Half a vegetarian stock cube, crumbled
1 tablespoon frozen peas, thawed
Half a medium-sized carrot, peeled and finely grated
1 dessert-spoon cold water
METHOD
Lay the cabbage leaves on a surface.
Mix the rice, sweetcorn, raisins, peas, carrot, stock cube and cold water together and blend well.
Divide the mixture into four parts, and spoon one each onto the four cabbage leaves, placing into the center. Carefully fold over the edges of the cabbage leaves to make 4 parcel shapes and secure each one temporarily with cocktail sticks pierced through the middles. Using thin white sewing cotton, carefully tie each parcel up on all four sides, bringing the cotton up to the top and knotting securely.
Bring about 1 inch of water to the boil in the base of a steamer. Carefully place the cabbage parcels in the top part of the steamer, cover the steamer with a lid and steam the cabbage parcels for approx. 15 to 20 minutes. Lift the cooked parcels out of the steamer with a slotted spoon and serve.
