I agree with what others say, in that it can be very difficult to dream up interesting vegetarian sandwich fillings. During my veggie phases in life, I have experimented with all sorts of weird and wonderful combinations some of which have bordered on inedible and some of which have been delicious. I have stuck with my ten favorites, and they are a regular part of my diet, even during my carnivore phases. I thought I'd share this top ten with other readers........and I invented little names for them too....
1. Peanut Butter Crunchy Delight Best with wholegrain/wholemeal bread. Thickly spread crunchy peanut butter on each slice of bread. Lay a few washed raw bean sprouts onto one slice of the bread and top with thinly sliced raw mushrooms, a generous sprinkling of sesame seeds and one small thinly sliced tomato. Press the other slice of bread on top.
2. Cheesy Zingy Carrot Spectacular Peel and grate a medium-sized carrot. Spread two slices of bread of any type thickly with soft cheese or cheese spread (use soy cheese if you are vegan). Put the grated carrot into a dish, and sprinkle a little Tabasco sauce over the top. Mix with a teaspoon, and distribute the carrot/Tabasco evenly over the cheese on the bread. Sprinkle a few sultanas over the carrot. Press the other slice of bread on top.
3. Sweet Nutty Celery & Cranberry Treat Very finely chop a small stick of celery and mix with a dessert-spoonful of any kind of finely chopped or ground nuts, and one tablespoonful of chopped dried cranberries. Mix thoroughly with one dessert-spoonful of plain yogurt. Spread onto one slice of white or wholemeal/wholegrain bread, and press another slice of bread on top.
4. Spicy Tomato Dream Slice one small tomato thinly and sprinkle with a tiny drizzle of olive oil and a generous sprinkle of freshly ground black pepper. Mix a generous pinch of curry powder into 1 tablespoonful of plain yogurt. Spread the yogurt thinly over two slices of any kind of bread. Take 6 washed lettuce leaves place 3 onto the yogurt side of one slice of bread, cover with the tomato slices. Place the remaining 3 lettuce leaves onto the tomato slices and sandwich together with the other slice of bread.
5. Green Leaf & Yogurt Mint Passion Mix 1 tablespoonful of plain yogurt with 1 dessert-spoon-full of chopped dried or fresh mint leaves. Spread the yogurt mixture evenly over the surfaces of two slices of wholemeal or granary bread. Make a green leaf mix using various salad leaves, such as lettuce, rocket, raw
