Recipes: Easy dishes for college students

College students are typically on-the-go, and either don't sleep enough or don't eat properly - or both! Life in the dorms is not often conducive to cooking, but with a few simple ingredients you can fix some nutritious, quick, and delicious snacks or meals.

The best thing about these recipes is that the only things required are basic ingredients, a knife, a measuring cup, a spoon, a blender, and an electric skillet.

Peanut Butter Balls

1 c. peanut butter

1 c. corn syrup

1 c. powdered sugar

1 c. powdered milk

Mix all ingredients together and form into small balls.

What could be simpler than this? They're a good source of protein and calcium, i.e., energy and strength, and can be enjoyed for any meal or a quick boost.

Smoothies

1 c. frozen fruit

c. vanilla yogurt

c. juice

Mix all ingredients in a blender and enjoy. Another good source of calcium, and a host of vitamins, these can be made anytime and are very portable - not to mention a lot less expensive than ones you might purchase already made.

Back in pre-microwave days I discovered a nearly-forgotten appliance that got me through a lot of cafeteria meals: an electric skillet. Of course, check with your RA to make sure it's allowed, but these are very versatile. You can fix TV dinners, all kinds of frozen foods, soups, and even bake a cake in an electric skillet. You may have to guess on temperature and timing, but with a little luck you can eat like a king - without ever trying to determine exactly what that mystery meat is in the dining hall!

Veggie Soup

1 can tomato soup, plus one can water

1 can corn

Chopped green pepper

Chopped onions

Any seasonings you prefer

Mix all ingredients and simmer in an electric skillet until hot. Chock full of vitamins, great on a cold afternoon. You can also vary the kind of vegetables used, the spices, and most grocery store salad bars have already washed and chopped veggies available. For some extra calcium, add a handful of cheese.

With a little daring and some experimentation, you can be a great cook on a low budget - and with very few gadgets and tools at your disposal. It sure beats going out for fast food every day and spending money you don't have!
