I am from MS,and almost everyone here loves to hunt,esp.deer.My grandmother rasied me,and my granfather loved to deer hunt;so she passed down some of her favorite recipies to me.I thought I would share some of them.Thank You!
Crockpot Deer Chili
2 lbs. ground deer
1 lb. italian sausage
2 tsps.Vegetable oil
1 medium sized onion(diced)
2 stalks celery (diced)
2 large carrots (diced)
1-3 jalapeno peppers(diced)
1 green bell pepper (diced)
4 cans of kidney beans
2 small cans diced tomatoes
1 (6 oz) can tomato paste
1 cup red wine
1/4 cup Worcestershire sauce
2 tablespoons chili powder
2 tsps. cumin
1 tsp. coriander
1 tsp. dried oregano
4-5 bay leaves
1 tsp. allspice
Shredded cheddar cheese and sour cream (toppings)
Brown the deer and sausage together. Add to crockpot. Brown all of the vegetables except the bell pepper in 2 tsp oil. When the onions are clear,add the bell pepper and remaining ingredients.Stir.Cook on high for 4 hrs. Top with cheese and sour cream.
Deer Steaks With Gravy
1/3 cup plus 3 tablespoons all purpose flour
3/4 tsp. black pepper
1/2 tsp. salt
1/4 tsp. paprika
4 boneless deer lion steaks
3 tablespoons butter
1 3/4 cups milk or cream
Combine 1/3 cup flour,pepper,salt,and paprika in a shallow pan.Dredge steaks in mixture.Melt butter on low in a non-stick skillet.Add steaks and cook until brown,turning steaks over once.(keep warm)
Combine the remaining 3 tablespoons of flour and the milk in a small bowl.Whisk mixture into skillet drippings.Cook over low heat for 3 mins or until gravy bubbles.Stir Constantly! Season with salt and pepper.Serve gravy over steaks.
Easy Deer Roast
1 (3-4)lb deer roast
2 (10 3/4 oz.) can of cream of mushroom soup
1 package dry onion soup
1/2 cup white wine
Place roast in foil.MIx onion soup,mushroom soup and wine.Pour over roast.Close foil,place in a baking dish,and bake for 2 1/2 - 3 1/2 hrs. at 350 degrees.
Hunter's Meatloaf
1 lb. ground deer
1/2 lb.ground pork
1 1/4 cups milk
1 cup dry bread crumbs
1 egg (beaten)
1/4 cup finely chopped onion
1 tsp. Worcestershire sauce
1 1/2 tsps. salt
Ketchup
1/4 tsp. dried sage
1/2 tsp. dried mustard
1/4 tsp. celery salt
dash of garlic
1/4 tsp. black pepper
Place in roast in heavy duty foil.Mix onion soup,mushroom soup and wine.Pour over roast.close foil,place in a baking dish,and bake for 2 1/2 - 3 1/2 hrs.Combine all ingredients except ketchup.Shape into shallow loaf pan.Make an indention at top and fill with ketchup.Bake at 350 degrees for 1 hr.
Deer Spaghetti
1 lb. ground deer
1/4 cup olive oil
2 tablespoons minced parsley
1 cup chopped onion
2 cloves garlic,minced
1(12oz) can tomato sauce
2 tablespoons Worcestershire sauce
salt and pepper(to taste)
1(8 oz) box spaghetti noodles(cooked)
Parmesan Cheese
Brown deer in oil. Add parsley,onions and garlic.Add remaining ingredients except spaghetti and cheese.Simmer on low for 2 hrs.Serve over spaghetti.Top with parmesan cheese.
