How to serve foie gras
Foie gras is a delicate and decadent food. Though it may be used as an ingredient in French recipes (such as Tournedos Rossina-Chicken Souvaroff), it is best served as an hors d'oeuvre before the meal, because that is when your palate is clean and neutral, and you can best appreciate foie gras' delicate flavors.
To serve, chill the can of foie gras for a couple of hours, but do not freeze it. Take
